BREWERY CLEANING AND SANITIZING
GENERAL CLEANING
- Never use water or cleaning solution hotter than 160oF.
- Always were protective clothing when handling and using cleaning chemicals.
- Always protect your eyes from accidental spraying or splashing.
- If cleaning chemicals or solutions are spilled on your clothing - rinse yourself
immediately and thoroughly remove contaminated clothing.
- Do not wait till later. Do not rinse clothes and wear again until thoroughly cleaned.
- Ensure that all manways are sealed and hose clamps tightened before CIP cleaning.
- If more than one person works in the brewery, attach a sign to the manway of
a tank being CIP cleaned saying "DO NOT OPEN MANWAY - CLEANING IN
PROGRESS"
- Store all cleaning materials in the proper place - away from other brewing
ingredients.
- Always rinse cleaned surfaces thoroughly with cold water, especially if iodophor
type sanitizer will be used following a caustic cleaning-rinsing cycle.
- If cleaning solution temperature is greater than ambient, open vessel to atmosphere
after cleaning to allow for air contraction during cool down. (Avoid tank
implosion)
- Keep a can of baking soda nearby to neutralize caustic or acid spills in emergencies.
- Never add water to acid (FAC-106).
- Never open a manway unless you are sure the vessel is depressurized and
is not filled above bottom of manway.
- Valves or sample cocks used to remove product must be cleaned immediately.
- Do not clean interior of closed vessel unless purged of carbon dioxide - carbon
dioxide is heavier than air.

Heavy Duty Alkaline Cleaner (Caustic Cleaner)

Leaves slippery feeling on skin. DO NOT use for hand cleaning.
Do not get on clothing, skin or in eyes.
Use plastic scoop(long handle) to remove from container.
Rinse container used to transport material thoroughly after use.
Requires excessive rinsing to remove from skin or clothing.
Use for CIP cleaning:
At 5 lbs. per bbl. (1.6% Caustic), 90o - 120oF
---Brew Kettle, Mash Tun, S/S Piping, Pumps, Brewery Hose,
Heat Exchanger (Back flush: circulate solution through unit backwards)
At 3 lbs. per bbl. ( 1% Caustic)---Unitanks.
Thoroughly rinse cleaned surface with cold water.
FAC-106 Liquid
Low-Foaming Acid Cleaner.
6 gallon pail.
Colorless liquid.
Highly corrosive to skin and clothing(will eat holes in clothing).
Requires excessive rinsing to remove from skin and clothing.
Avoid all skin contact, protect eyes.
Do not transport through building in an open or glass container.
Use for initial vessel CIP cleaning and once per month following a caustic
cleaning and cold water rinse.
Use:
All vessels: 64 liq. ounces ( 1/2 gallon) per bbl., 70o - 100oF.
Thoroughly rinse cleaned surface with cold water.
Ensures high activity of following iodophor sanitation (lower pH)
SUPER-KLOR
Chlorinated Cleaner/Sanitizer ( TSP Type )

*Contains chlorine: Do not let stand on or in stainless steel vessels or
severe corrosion will result.
Rinse thoroughly with cold water after cleaning.
Use for cleaning and sanitizing:
At 3/4 wt. oz. per gallon---Lab ware, utensils, plastic pails, plastic
tubing, clamps, gaskets etc. by hand; floors and walls.
At 1 wt. oz. per gallon--Rapid brush and green pad cleaning of mash tun
interior and false bottom.
At One to Two 1 1/2 lb. bags per bbl.--CIP cleaning and sanitizing of
serving/ bright tanks, S/S filter, sheet filter.
DU-SAN SANITIZER( Iodophor Type )
Case of 4 - 1 Gal. Containers
Dark brown liquid.
Can stain clear tubing and plastics.
Can stain Stainless steel if used at excessively high concentration or
after caustic cleaning and inadequate rinsing (at high pH's).
A more concentrated solution is not more affective.
Use for sanitizing:
At 6 liq. ounces per bbl. ; 1 liq. ounce per 5 U.S. gallons ; 1 1/4 tsp.
per gallon--
- Yeast pails, cans, buckets and utensils, clamps, gaskets,
carbonating stones.
- Unitanks - after thorough water rinsing. Allow to dry, surface
will remain sanitized.
- Heat Exchanger and Hoses - pack with sterilant until used.
Unitanks, heat exchangers, hoses and serving tanks must be rinsed
thoroughly with water before use.
WINDEX (GLASS CLEANER)
Use on windows counter tops and Copper Cladding.
Do not use abrasives or abrasive pads (use soft cloths or paper towels).
SANITIZER (QUATERNARY AMMONIUM TYPE, QUAT)
Use on all brewery surfaces to eliminate odors and bacteria especially
molds.
Walls, tiles, vessel legs-feet, exposed pipes, etc.
GENERAL PURPOSE LABORATORY CLEANER
Use for glassware, or other labware where no residual film is desired.
