Microbreweries

A microbrewery is a small-scale brewery that produces and packages beer in kegs, bottles or cans for off-premise sales and consumption. Thus, all brewpubs are microbreweries in the sense that they are small-scale breweries, but not all microbreweries are brewpubs (only if they have a brewery tavern or pub on the premises). The definition of "small-scale" continues to evolve as the craft brewing industry grows, but the current consensus defines a small-scale brewery as one producing 3,000 - 50,000 bbls./58,000 hls. of beer per annum.

The production capacity of a brewery is more a function of the number of fermentation and conditioning tanks than the size of the brewhouse vessels. You can brew 24 hours a day, but you have to have someplace to put the beer while it ferments and ages. In determining the appropriate equipment configuration for a new brewery the first question to ask is what is the desired annual volume of production, not "how much beer can it brew per day."
