The ABT "Tavern Brew" Brewing System

ABT has developed a "complete" line of affordable, easy to operate, modular brewing systems. ABT's exclusive "Tavern Brew" line is an all grain, easily expandable, completely self contained miniature of our full sized brewery systems. It is designed to fit through most standard doorways and comes pre-assembled to minimize installation time. Now you're ready to brew in a matter of days, not weeks. In the 3.5 barrel to the 7 barrel/8.5 hectoliter configuration, the "Tavern Brew" offers you the highest quality, most versatile brewery system available today at a surprisingly modest cost.

 

PRODUCT DESCRIPTION

Brewhouse

The "Tavern Brew" brewhouse is based on traditional brewery designs which utilize a mash/lauter tun side by side with the brewkettle.The entire unit is constructed of stainless steel. Standard features the 3.5 barrel brewhouse include: sanitary centrifugal pump, all stainless plate heat exchanger, manifold system, electronically controlled immersion heater and a control panel complete with digital temperature controllers, switches and motor starters, Also included are a stainless steel brewers paddle, 1.5 inch sanitary tri-clamp butterfly valves, food grade brewers hose, hydrometer, pH meter, water filter and an assortment of all necessary clamps, gaskets and fittings needed to brew.

The system includes side manway doors for spent grain removal and hot liquor tank inspection. Average brew time is about 5 to 6 hours.

 

Fermenters

The fermenters are available in a wide variety of configurations for almost all possible production demands. All tanks are mounted to a stainless steel platform and can easily be moved through most doorways. Standard features include: self contained refrigeration unit, jacketed and insulated fermentation vessels, in-swing out-swing oval manway doors, liquid filled pressure gauges, pressure / vacuum relief valves, 60 degree conical bottoms and flanged and dished heads. Other features include; 1.5 inch sanitary tri-clamp butterfly valves, removable tank washer, C.I.P. arm with valve, racking valve, digital control panel, and all necessary clamps, gaskets and fittings needed to brew.

All units are delivered completely assembled from the factory. Installation entails: filling the reservoir with water and glycol, hooking up the power, and turning it on. Each fermenter is capable of controlling the temperature of the beer within + or - 1 degree F. The fermenters are also pressure vessels, which enable the brewer to let the beer naturally carbonate and mature for true cask conditioned beers. And because the "Tavern Brew" is modular, all that is needed to increase your capacity is to add another fermenter platform, It's that simple.

 

Serving Vessels

All serving vessels are designed to accompany a specific fermenter platform. The 3 and 6 barrel fermenters and serving tanks come complete with pressure / vacuum relief valves, liquid filled pressure gauges, top mounted view ports, in-swing out-swing oval manway doors, sanitary butterfly valves and tank washer adapters.

All serving vessels are non-jacketed and are designed to be stored In a walk in refrigerated cooler. If the entire brewery Is to be displayed, jacketed and insulated versions of the 3 and 6 barrel serving tanks are available. This allows your beer to be stored and served- from anywhere in your location. Another advantage of jacketed serving tanks is the ability to control the temperatures of each individual style or beer.

Portable C.I.P. Pump

Every "Tavern Brew" brewhouse comes with a sanitary stainless centrifugal pump. This pump can be used for all brewery functions, including cleaning and sanitizing. If the serving tanks and fermenters, are not located within the immediate area of the brewhouse, a portable pump will be needed for the C.I.P. and transfer functions. Our portable pump is the same pump used on the brewhouse with the addition of a waterproof housing for the motor starter and control switches. Also included is a 1.5 inch tri-clamp style butterfly valve, heavy duty power cord, and complete stand assembly.

 

Plate and Frame Beer Filter

The "Tavern Brew" product line offers as an option, and is also recommended for clarity, its own designated filter system. This filter is a 20 plate, 20cm X 20cm, portable stainless steel unit with its own pump, pressure gauge and tri-clamp adapters.

 

Installation

Your ABT "Tavern Brew" brewing system will be shipped completely modular with most of the assembly completed at our facility. Once the system is in place, a licensed technician in needed to hook up the gas line and install a flue vent (a steam vent may also be necessary If the unit is equipped with the optional domed lid for the brewkettle). Installation is completed within a week.

 

BREWING YOUR OWN BEER

Beer is comprised of four basic ingredients: water, malted barley, hops and yeast, Here are the nine basic steps in brewing quality beer:

 

Milling
The malted barley must first be ground to expose the starches inside the kernel. If the milling is too coarse, the kernel will remain uncracked and the starches will not be exposed to the hot water. If the milling is too fine, the kernels will be pulverized and the resulting product will resemble flour, creating problems in the mashing stage. Pre-ground malt is recommended in a small brewpub system.

 

Mashing
There are many mashing techniques available to the brewer, these usually depend on the style of beer to be brewed. The technique used most often for ales is the single temperature infusion. This is done by mixing the milled barley with hot water to a temperature between 152-156 degrees F. The mash is then allowed to sit for 60 to 90 minutes while the natural enzymes in the barley convert the starches to sugars.

 

Sparge / Runoff
After the mashing is complete, the now sugary sweet liquid, called wort (pronounced "wert"), is run off into the brew kettle. The grain must also be rinsed with hot water, 168-172 degrees F., to extract the remaining sugars. This is done until the brew kettle is filled to its proper level or the sugars have essentially been extracted.

 

Boiling
As the kettle begins to boil, the hops are added to the wort. The high temperatures and the constant rolling action of the boil release the essential oils contained In the hops, The bitterness of these oils balance out the malty sweetness of the wort and give the beer its signature hop characteristic. The later the hops are added to the boil, the more aroma and less bittering character the hops will add. Boiling also concentrates and sterilizes the wort before it is transferred for fermentation. The boiling process usually takes 60 to 90 minutes.

 

Whirlpool
The whirlpool is done in the brew kettle after the boil. The wort is allowed to steep and nettle for a length of time, usually 30 minutes, and is then whirlpooled for 5 minutes. This whirlpool action causes the solids suspended in the wort to precipitate and form a pile in the center of the kettle, leaving the wort free" from most of the solid matter.

 

Cooling / Heat Exchanger
Before the wort can be transferred to a fermenter, it must be cooled to approximately 70 degrees F. This process takes place as the hot wort is passed through the plate heat exchanger. The cooled wort can then be transferred to a fermenter for fermentation.

 

Fermentation / Conditioning
Once the wort reaches the fermenter, the yeast can be pitched. The yeast quickly replicate as they convert the fermentable sugars into alcohol and carbon dioxide. This primary fermentation usually takes between 3 to 7 days. After the primary fermentation is complete and the majority of the fermentables are converted, the beer is cooled and allowed to condition for another 1 to 3 weeks. During this conditioning stage, the yeast cells begin to flocculate and settle to the bottom of the cone where they can be racked off the beer.

Filtration
After the beer is conditioned, it is ready to be filtered. In the filtering process, beer is transferred through a series of filter pads to remove any remaining suspended matter that is left in the beer, resulting in a crystal clear product. In many cases, the filtration process may be avoided altogether to allow the beer to be served in its natural state.

 

Carbonation / Serving
While all beers become partially carbonated during fermentation, additional carbonating is usually needed to bring it to the levels most people expect beer to be. When the beer has reached the serving tank, carbonation Is added by Injecting carbon dioxide through a very fine stone In the serving tank. The final journey of the finished beer is through the serving line, to the top, and into the glass for complete enjoyment.
